Blues Nights in Chicago
Memory of Rib Tips - 1970's
by Gloria Pierce
After a late night in the south side Chicago Blues Clubs, still high on the music -- bodies tired from dancing, talking, singing, drinking, getting high, it was time to stop - get it together before sleep. Near Theresa's and The Checkerboard Lounge, the remedy was a bucket of RIB TIPS. On 49th street near the elevated train, was Ringo's. There you could get a big bucket of those tasty morsels of pork rib tips - grisly and slathered in BBQ and hot sauce just waiting to be digested to soak up the excesses of the evening. When the bars were closing, the traffic to Ringo's got heavy. Still not ready to go home, hungry and looking for that last sensual 'piece' for the evening, we headed there in groups. Those rib tips soothed the nerves, cut the alcohol, and took away any pain of the evening for those of us who were still out and most likely alone. Have a bucket of tips and the next day seemed like a new beginning. Man, those rib tips were good and my stomach was quite young - I could just about eat the entire bucket.
